My garden is in full bloom right now, popping out zucchini's faster than I can eat them! One of my favorite ways to use up a bunch is to make ZOODLES! They're the perfect base to get creative with, adding whatever sauce and veggies you have around. I settled on my go-to cashew sauce for this dish, adding a healthy handful of fresh basil. My cherry tomatoes are also overflowing so I decided to get a little fancy and placed some in the dehydrator, transforming them into delicious sun-dried tomatoes! I couldn't resist tossing in some Lancaster corn too, it perfectly balances the dish, adding a bit of sweetness and texture ( :
It was my mom's birthday this week and she absolutely LOVES Black Raspberries! I found some growing wild on the side of the road, and knew I had to make a sweet treat for her special day!! This week has been super hot, so I felt like Ice Cream was the way to go ( :
I don't know about everyone else, but I ALWAYS have some kind of pickle in my refrigerator. From Dill to Kimchi, I crave that crunchy, sour and spicy flavor! Now that our gardens are overflowing and produce prices are a little more affordable, it's a great time to explore the art of pickling ( :
My CSA included this recipe from chef Adam Boyd in a previous box, and I made a couple adjustments based off what I had on hand and my personal preferences. It is VERY filling and pairs great with a little flatbread/naan or a green salad. The flavors will transport you to the beautiful mountains of northern Thailand!
