It was my mom's birthday this week and she absolutely LOVES Black Raspberries! I found some growing wild on the side of the road, and knew I had to make a sweet treat for her special day!! This week has been super hot, so I felt like Ice Cream was the way to go ( :
A quick google search led me to a recipe for plant based ice cream by the Minimalist Baker. I made a few adjustments, and 2 batches later I think I got it juuuust right!
Ingredients:
2 cans Organic Coconut Milk
1/2 cup Maple Syrup
Dash sea salt
1 tsp Vanilla Extract
2/3 cup fresh BerriesĀ
Directions:
1. Add all ingredients to a mixing bowl, blend until smooth
2. Add mixture to ice cream machine and let it work its magic
3. Garnish with a sprig of fresh mint and ENJOY!!
**This is a great recipe for the PITTA Season of Ayurveda. Coconut, Maple Syrup and Berries are all cooling in nature. The Sweet flavor also helps to pacify the heat of Pitta!***
